Echoing the old winery barn of Le Château de Breuil in its architecture, this assertively contemporary building awards a place of honour to noble materials such as oakwood. Opening outside, the dining-room offers a panoramic view of the estate's gardens, its flowery meadows and natural ponds.

A land of inspiration for Chef Frédéric Calmels, born in L'Aveyron, this magnificent setting also nurtures his creativity. At Le Favori, he thus prepares cuisine that is mindful of the living world, plantlife and human values, in perfect harmony with the environment.

Endowed with excellent know-how acquired in prestigious addresses (La Tour d’Argent in Paris, Le Loti de La Réserve in Geneva), Frédéric Calmels multiplies techniques and seasonings to emphasize the quality of products from the Loire. In his dishes, local fish and game are accompanied by seasonal vegetables with rare spices and herbs, such as "Crisp celery flavoured with coriander, Royal Sea-bream marinated in sweet-and-sour vinaigrette" or "Kale stewed in its vegetable water, fermented mushrooms, beef sirloin marinated in saté".

Pursuing its responsible approach, the menu at Le Favori - and the Chef's inspirations - evolve with the seasons. Proposals that are discovered on the "Entre Val de Loire & Forêt de Sologne" Menu, with 4 or 6 courses. Head Sommelier Thibault Delpont will be delighted to suggest the best pairings.

He will also invite you to discover La Grand’Vigne, the in-house vintage of Les Sources de Cheverny comprised 100 % of Romorantin, and the finest labels from the Loire Valley, and the rest of France, from his tasting desk, designed like that of a perfume-maker.
