Endowed with excellent know-how acquired in prestigious addresses (La Tour d’Argent in Paris, Le Loti de La Réserve in Geneva), Frédéric Calmels multiplies techniques and seasonings to emphasize the quality of products from the Loire. In his dishes, local fish and game are accompanied by seasonal vegetables with rare spices and herbs, such as "Crisp celery flavoured with coriander, Royal Sea-bream marinated in sweet-and-sour vinaigrette" or "Kale stewed in its vegetable water, fermented mushrooms, beef sirloin marinated in saté".
