On the strength of the success encountered by their "Palace des Vignes" in Le Bordelais, Alice and Jérôme Tourbier decided to open their new hotel, Les Sources de Cheverny, at the heart of Le Val de Loire, one of France's finest vineyards, listed in UNESCO's World Heritage. In order to revive the wine-producing activity formerly pursued on the estate, 17.3 acres of Romorantin, the exclusive white variety of the "appellation" Cour-Cheverny (AOC), were planted there, then cultivated by Philippe Tessier and his son Simon, well-known vintners in the region, respectful of vines, mankind and the environment. Alice and Jérôme Tourbier thus gave birth to their own wine composed 100 % of Romorantin and called "La Grand’Vigne" in reference to the star-rated restaurant at Les Sources de Caudalie. Promoting and encouraging local producers who work with nature but very few inputs or sulphites are, in fact, among the priorities of the couple, intent on preserving the environment around Les Sources de Cheverny.
According to the hotel's Head Sommelier, "La Grand’Vigne" is an elegant, aromatic wine. "Its pale golden colour precedes a fragrance of white flowers, with notes of minerals, honey and quince. The taste is ample but refined, and long-lasting." As for pairings, Philippe Tessier suggests that the Sources de Cheverny vintage be served with rich dishes cooked in sauce (based on white meat, poultry or fish from the Loire), or with regional asparagus.
